Because it is Fall, Rocky and I made his favorite Pumpkin Muffins this morning. He rose before all the others and helped with the stirring and scooping. The whole house smells like pumpkin pie this morning! Yummy! My cook book is crumbling to pieces so I am just going to make a section for my favorite recipes here so they are easy for me to print out.
1 can pumpkin
3 cups whole wheat flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 cup sucanat - (or sugar)
2 teaspoons each of ground cinnamon, allspice, ground cloves and ground nutmeg
2/3 cup oil
3 eggs
Stir all the dry ingredients together, mix in the wet ingredients. Scoop into muffin tins to the top. Bake at 350 for 25 minutes. There isn't a lot that can go wrong with this recipe.

Onion & Garlic Soup
Had a bout with bronchitis during the week. Tried many over the counter remedies and was going to pay a visit to the doctor this a.m., but tried this recipe for Onion and Garlic Soup last night. I instantly felt better.
1 tbsp butter
1 Onion
1 tbsp minced garlic
2 bouillon cubes
4 cups water
Saute onion in the bottom of pot with butter. Add garlic after onion is mostly finished. Add water slowly with bouillon cubes. Bring to boil a few minutes. Simmer another 10 minutes.
I still need a bit more rest to feel myself again.
